Specialties of Kumamoto

I research specialty of Kumamoto. I found each specialty has feature and history etc.

Karashi Renkon" is specialty of Kumamoto. A hole of a lotus root is filled with mustard miso and fried. It is one of the local dishes on behalf of Kumamoto. It was devised for Tadanori Hosokawa who is a clan leader as a nourishing food in the Edo era. It was the taste which has never been loaned out of a Hosokawa clan until the Meiji Restoration. Lotus roots is crisp. Mustard miso has sharp taste. “Karashi Renkon” is very delicious.
Basashi is meat of horse. This is the one of special products of Kumamoto prefecture. It can be eaten many kind of way to cook. For example, it is eaten for sashimi which is sliced raw fish, skewer and Sakura Nabe which is a dish cooked in a pot of at the table. Basashi is healthy food because it is light calorie, low-fat and high calcium.
Dago soup is homely country dish. Dumplimg is called "Dago" in Kumamoto. Flour is kneaded with water and tear it, then stew it with seasonal vegetables. There are a lot of feature by area. For example, there are "Ikinari Dago Soup" which is used sweet potato and "Sen Dago Soup" which is used potato.
Takamori Dengaku is traditional dish of Takamori town which locate southeast of Aso. It skewer and roast by roast Tsurunoko potato which is specialty, homemade bean curd, konjak and brook trout that is to say yamame. Then we eat it piping hot. Also special miso is delicious. And if we sit aroud the fireplace at restaurant of block, we can soak Japanese atmosphere.
Banpeiyu is a kind of orange and one type of shaddock. "Ban" means late maturity, "pei" means pulp is whitish and "yu" originates round citrus in Chinese. It is feature that fruit is big and skin is thick especially. Now Banpeiyu is specialty in Yatsushiro town of Kumamoto. Banpeiyu is called "King of citrus" because it is very big. Banpeiyu is good smell and sweet-and-sour. It is keep for long, skin is tender and place it room for ornamental for about a month until in season.
There are many delicious foods in Kumamoto.
